I love corn. I love fries. Let's make polenta fries! I followed tasty's recipe except I doubled the herbs. I might double the salt next time. I added fried spam strips to add variety.

nonstick cooking spray
1 ¼ cups milk
1 ¼ cups broth (I used beef)
1 cup polenta
1 tbsp butter
½ tsp salt
½ teaspoon pepper
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon dried rosemary
olive oil, for brushing
Add milk and vegetable broth in a sauce pan and bring to a boil.
Add polenta and whis. Reduce heat to low, continue whisking for about 5 minutes until you reach mashed potato texture.
Add butter, salt, pepper, oregano, thyme, and rosemary.
Transfer polenta to a greased baking sheet (I used 8x8) and spread out evenly with a spatula. Chill for at least 2 hours.
Transfer polenta to chopping board and cut to your preferred "fries" strip size and transfer to baking sheet Brush each piece with olive oil.
Bake for 30 minutes, flipping halfway through and brushing with more oil. I started frying spam during the second half of baking.
